2 1/2 cups all-purpose flour
1 cup white sugar
1 cup butter or margarine
1 cup grated cheese
1 egg
1/2 tsp. lemon extract
1/2 tsp. fine salt

Cream butter, cheese and sugar together. Add lemon extract and beat in egg. Beat until light. Add sifted flour and salt, gradually. beat until well blended. On an ungreased cookie sheet, drop mixture by spoonful. bake in a preheated oven at 350F for 15 minutes. Makes about 6 dozen cookies.
