  • 1/4 cup oil
  • 8 garlic cloves, minced
  • 1 large onion, diced
  • 1 chicken breast, boiled and sliced
  • 10 dried black Chinese mushrooms, soaked in warm water, drained, and thinly sliced
  • 3 cups chicken stock
  • 1/2 small carrot, cut into matchsticks
  • 1/2 leek, cut into matchsticks
  • 1 bunch Chinese celery leaves, thinly sliced
  • 6 oz dried glass noodles, soaked in water for 10 mins then cut into lengths
  • 1 1/2 tbs fish sauce
  • pepper to taste

Heat oil in a wok and stir-fry garlic until golden, then add onion and stir-fry until translucent.  Add chicken and mushrooms, stir-frying for another 2 minutes.  Add stock and bring to a boil, then add carrot, leek, and celery leaves and cook for 3 more minutes.  Add noodles and cook for 3 minutes, seasoning with fish sauce and pepper.  Remove from heat and transfer to a serving dish.  Serve hot.
