Prep: 20 mins. Cooking: 1 hr. Serves 4.
Ingredients:
- 1 lb 10 oz pork spare ribs
- 1 tbs peanut oil
- 2 tsp finely chopped garlic
- 1/4 cup dry sherry
- 1 tbs chilli bean paste
- 2 cups water
- 2 tsp hoisin sauce
- 3 tsp superfine sugar
- 1 tbs soy sauce
Place pork in a large saucepan with enough water to cover. Bring to a boil, reduce the heat, and then simmer for 5 minutes. Drain well, then place in a deep, heavy-bottomed saucepan along with all remaining ingredients. Cover and simmer for 45 minutes then drain, reserving 1 cup of the liquid.
Heat a clean wok and sear the pork pieces till browned. Add reserved cooking liquid and cook over medium heat until a glaze is formed. Remove pork from pan and chop into 1 1/4″ pieces and pour sauce over them. Serve immediately.
