Ingredients:

  • 4 cups water
  • 1 lb beef ribs, cut into pieces
  • 1 (10-oz) can diced tomatoes
  • 4 red green chilies
  • 1 small onion, diced
  • 2 heaped tbs tamarind pulp mixed with 1 cup water, mashed and strained
  • 3 potatoes, peeled and cut into chunks
  • 7 oz green beans, cut into lengths
  • 1 lb water spinach, washed and trimmed, leaves and stalks separated, stalks cut into lengths
  • 1 tbs fish sauce
  • pepper


Bring water to a boil in a saucepan and add beef, along with next 5 ingredients.  Simmer for 20 minutes, then add potatoes and simmer for another 25 minutes.  When potatoes are tender, add beans and spinach stalks.  Cook 3 minutes and season with pepper.  Add spinach leaves and cook for another 3 minutes.  Serve hot.
