Makes about 40 money bags
Ingredients:
- 13 oz ground chicken
- 3 1/4 oz finely chopped ham
- 4 finely chopped scallions
- 1 finely chopped celery stalk
- 3 tbsp. chopped bamboo shoots
- 1 tbsp. soy sauce
- 1 crushed garlic clove
- 1 tsp finely grated ginger
- 40 wonton wrappers
- 20 chives
- Oil for frying
In a bowl, combine the chicken, ham, scallions, celery, bamboo shoots, soy sauce, garlic clove, and ginger. Working with 1 wonton wrapper at a time, place 2 teaspoons filling in the center, gather up the corners and pinch together to form a pouch, leaving a frill at the top. Cut 20 chives in half and place in a heatproof bowl. Cover with boiling water for 1 minute; rinse and drain. Deep fry the money bags in hot oil for 4-5 minutes until crispy and golden; drain on paper towels. Tie a chive around each money bag. Serve immediately.
