Ingredients:

  • 12 fresh medium shrimp, heads and tails discarded, shells left on
  • 2 cups bean sprouts, rinsed, shells and tails discarded
  • 1/2 small cake pressed tofu, drained and diced
  • 4 oz ground chicken
  • 2 tbs fermented baby shrimp
  • oil for deep-frying

Ingredients for batter:

  • 2 beaten eggs
  • 1 tsp baking powder
  • 1/4 cup cornstarch
  • 3/4 cup flour
  • 1/2 cup water
  • 1/2 tsp ground pepper


Make batter by whisking all ingredients together.  While beginning to heat oil in a wok, add shrimp and all remaining ingredients to batter and mix well.  Ladle about 3 tablespoons into hot oil and let fry for 3 minutes.  Remove with a slotted spoon and let drain on paper towels.  Repeat with all remaining batter mixture.  Serve hot with desired condiments.
