Filipino Shrimp-Stuffed Peppers recipe, Filipino Recipes


  • 1 lb 2 oz raw shrimp, peeled, deveined, and finely chopped
  • 10 1/2 oz ground lean pork
  • 1 tsp salt
  • 3 scallions, finely chopped
  • 3 tbsp water chestnuts, finely chopped
  • 3 tsp soy sauce
  • 2 tsp dry sherry
  • 1 tbsp oil
  • 3 bell peppers, assorted colors

Mix together the shrimp, pork, salt, scallions, water chestnuts, soy sauce, and dry sherry. Cut the peppers lengthwise into 3-4 segments and remove the seeds and membrane. Fill the pepper wedges with shrimp filling and cut in half. Heat the oil in a wok. Cook the pepper pieces in two batches over medium-high heat for 3-4 minutes, or until well browned. Turn over and cook for another 3 minutes; repeat with remaining pepper pieces. Serve immediately.
