  • 4 cups chicken stock
  • 1 tsp each salt and sugar
  • 1/2 tbs freshly grated ginger
  • 1/2 cup green peas
  • 1 large tomato, diced
  • 8 oz soft tofu, diced
  • 4 large fresh shiitake mushrooms, diced
  • 2 dried wood ear mushrooms, soaked in water and thinly sliced
  • 2 tbs each soy sauce and black Chinese vinegar
  • 1 tsp sesame oil
  • 1/2 tsp each pepper and sansho pepper
  • 2 eggs, beaten
  • 2 tbs cornstarch, blended with 2 tbs water

Bring stock to a boil in a large pot and add soy sauce, vinegar, sesame oil, and peppers.  Stir.  Slowly drizzle in eggs and let sit still for 1 minute.  Stir in cornstarch mixture and let simmer for 1 minute, then turn off heat.  Serve hot.
