Ingredients:
- 4 cups chicken stock
- 1 tsp each salt and sugar
- 1/2 tbs freshly grated ginger
- 1/2 cup green peas
- 1 large tomato, diced
- 8 oz soft tofu, diced
- 4 large fresh shiitake mushrooms, diced
- 2 dried wood ear mushrooms, soaked in water and thinly sliced
- 2 tbs each soy sauce and black Chinese vinegar
- 1 tsp sesame oil
- 1/2 tsp each pepper and sansho pepper
- 2 eggs, beaten
- 2 tbs cornstarch, blended with 2 tbs water
Bring stock to a boil in a large pot and add soy sauce, vinegar, sesame oil, and peppers. Stir. Slowly drizzle in eggs and let sit still for 1 minute. Stir in cornstarch mixture and let simmer for 1 minute, then turn off heat. Serve hot.
