- 3 tbs oil
- 2 cloves garlic, finely chopped
- 1 large onion, sliced into thin wedges
- 1 lb 2 oz pork loin, sliced
- 2 tbs cornstarch
- 1/2 tsp sugar
- 1/4 cup plum sauce
- 1 tbs soy sauce
- 2 tsp hoisin
Heat 1 tablespoon oil in a wok and cook garlic and onion until soft. Transfer to a plate and remove wok from heat.
Coat pork lightly in cornstarch and season with salt and pepper. Add remaining 2 tablespoons oil to the wok and return to the heat. When hot, stir-fry pork in batches until dark brown. Return all pork and juices to wok and add plum, soy, and hoisin sauces. Return onion to wok and toss well to coat. Serve immediately.
