Ingredients:
- 2 tbsp vegetable oil
- 1 small onion, peeled and chopped
- 2 garlic cloves, peeled, smashed, and chopped
- 2 large tomatoes, halved, cored, and sliced
- 2 cups oyster meat, drained
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1 green onion, cleaned and finely chopped
- 1 lemon, cut into wedges
Heat the oil in a frying pan or wok over medium-high heat. Add the onion and fry until it softens. Add the garlic and stir-fry until the onion and garlic are golden. Stir in tomatoes and stir for 3 minutes. Add oysters and season with salt and pepper. Stir and cook for another 3 minutes, or until the edges of the oysters begin to curl. Turn the mixture into a serving dish, sprinkle with green onion, and garnish with lemon wedges. Serve with rice.
