Ingredients:
- 1 lb boneless pork, cubed
- 1 tbs cornstarch
- oil for deep-frying
- 1 tbs each minced garlic and ginger
- 1 bell pepper, diced
- 2 scallions, sliced
- 1 cup pineapple chunks
Ingredients for batter:
- 3/4 cup each flour and cornstarch
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup water
- 1 1/2 tsp oil
Ingredients for sauce:
- 1/2 cup cider vinegar
- 1/2 tsp salt
- 2 tbs ketchup
- 1 tbs soy sauce
- 1/2 cup sugar
- 1 1/2 tbs cornstarch, blended with 3/4 cup water
To make batter, combine dry ingredients and gradually add water, whisking with a fork, until smooth. Stir in oil and set aside.
Whisk together all sauce ingredients and set aside.
Combine pork with cornstarch.
Heat oil in a wok until smoking. Dip pork in batter then add to wok. Deep-fry until light brown, only a few seconds. Remove and drain on paper towels. Discard any batter from wok and repeat with all remaining pork and batter.
Return all pork to wok and deep-fry a second time until golden, a few minutes. Discard oil and return wok to stove over high heat. Stir-fry ginger and garlic for 30 seconds, add pepper, and stir-fry another minute. Add scallion, pineapple, and sauce. Mix well and bring to a boil. Pour over sauce and serve.
